Looking for a healthy alternative to ice cream?
Who doesn't love ice cream? How can someone not love ice cream? I mean, in summer when you want something sweet and cold- only ice cream seems appropriate, right?
While writing my Weight Loss Made Simple Cookbook, I was searching for a delicious healthier recipe that can really fill that ice cream void. Something that can be made with superfoods if I am in the mood, or can just be made with chocolate chips to satisfy that ice cream craving.
I'm hoping to play around with this recipe in the near future to create different flavors, but for now, this is what I've got for you!
Frozen Greek Yogurt Bark
Yield: 4-6 servings 2 cups nonfat plain Greek yogurt
2 tbsp maple syrup 3 tbsp mini chocolate chips 1⁄2 cup chopped strawberries 1⁄2 cup small blueberries 1 tsp vanilla extract
(optional- sprinkle of cinnamon or cocoa powder)
Mix yogurt, vanilla, and maple syrup in a bowl. Add chocolate chips, strawberries and blueberries. Mix gently. Pour onto a foil lined baking sheet and spread so it's 1cm thick, and sprinkle with cinnamon or cocoa if desired. Freeze 3-4 hours till hard, and cut with a very sharp knife into 8 or so squares. Can be kept in individual resealable bags in the freezer for a quick snack or treat.
NOTE 1: In the picture above, I used dried fruit, which also worked out well.
NOTE 2: This is a really fun no-bake cooking project for kids!
